Description
Richaud et Badet est une entreprise familiale spécialisée dans la production artisanale provençale. Elle fabrique aussi bien des plats cuisinés originaux et régionaux (cassolette d’agneau, veau à l’Ancienne, alouette Provençale…) que des plats traditionnels du Sud de la France.
Les pieds et paquets ou pied paquet sont une spécialité purement marseillaise qui a pris sa place dans la gastronomie provençale au XVIIIème siècle.
Ce mets est composé de tripes d’agneau farcies, ficelées en petits paquets, mijotées avec du vin blanc, du bouillon, des pieds d’agneaux et du lard.
Ce plat contient des vertus alimentaires très riches en nutriments.
C’est toujours le plat traditionnel du « souper provençal » le soir du 24 décembre ou la semaine précédant Noël.
